Wine pairing tips
We usually hear that fish is paired with white wines and meat with red wines, but the pairing goes much further than that and it doesn't always have to be like that.
We accompanied Marta Sanahuja, from Delicious Martha, to the tasting of the Wine Cooking Maridado Menu of the Restaurant Vivanco, to learn the keys to the pairing of each of their dishes.
Starters are usually quite light dishes, so it is best to look for a light wine to accompany them. An intense and fresh red wine is perfect for pairing with a good foie. To combine with marine flavours, the most usual option is always a white wine, but how about a cool rosé? Meat, being an intense dish, it is important to pair it with a full-bodied red wine. As a finishing touch, the dessert, for which we choose a fresh, aromatic and sweet wine.
Taking advantage of Delicious Martha's visit to the Restaurant Vivanco, we couldn't help but ask her to show us a couple of recipes where wine was the protagonist. Two recipes that we are already looking forward to trying at home.
Truffles with chocolate and red wine, by Delicious Martha
In this video, Delicious Martha shows us how to prepare chocolate truffles with red wine, a very simple and quick recipe.
To make this dessert, you will need:
- 350 gr. of good quality dark chocolate
- 120 gr. of cream, 35% G.M.
- 4-6 tablespoons red wine
- Cocoa powder
- Chocolate noodles
Put the cream and wine together in a bowl and heat it in a bain-marie, stirring slowly. Just before it comes to the boil, remove the bowl and pour in the chopped chocolate. Leave to stand for a moment and mix with the spatula. To be able to form the balls, let the mixture cool in the fridge or freezer.
When cold, make small hazelnut-sized circles and coat them in chocolate noodles or cocoa powder, to taste, and you're ready to enjoy!
Blue Cheese and White Wine Sauce, by Delicious Martha
The second recipe proposed by Delicious Martha is a delicious cheese sauce with white wine, ideal for a dinner party with friends, as a snack or to accompany meats.
Do you want to know how to prepare it at home? Here are the ingredients:
- 250 g Roquefort cheese or a blue cheese
- 75 g unsalted butter
- 1 cup white wine
- Black pepper
- 1 cup cooking cream
- Chives and fresh coriander, for serving
This recipe is very simple. Mix the butter and cheese in a bowl. On the other hand, put the white wine in a saucepan, season with salt and pepper and bring to the boil. Continue adding the cheese mixed with the butter and cook over a low heat until it reduces. When the mixture is homogeneous, remove from the heat, sprinkle with the chopped spices and, ready to enjoy!
