elaboration
All the grapes are refrigerated in a cold chamber and pass through a double selection table for bunches and berries. Cold maceration for 8 hours and pressing.
The tear must obtained is racked into 500-litre French oak barrels where the fermentation process is completed.
upbringing
A good part of the wine is aged for 12 months in French oak barrels of extra fine grain of one and two wines in 500 litre formats with its lees. The other part matures with its lees in small tanks for the same period of time. The wine was bottled in November 2020, and has remained in an underground cellar for a minimum of 30 months until its release to the market.

2020 will always be remembered for the pandemic and its consequences. The outbreak of the pandemic paralysed the world and ushered in one of the most complex vintages in history. A cold and rainy winter gave way to an extremely wet and temperate spring and summer, with mildew and powdery mildew pressure like we had not seen for years. The struggle was constant, but even more so if we talk about it from the perspective of organic farming like Vivanco La Isla. We live in the vineyard from May to October. Every dawn. And so on until the grape harvest. The result: less opulent wines, but very frank. Fine, atavistic, delicate and fruity. Representatives of extreme viticulture and of man's work against adversity.
