winemaking
The grapes are harvested by hand in small boxes of ten kilograms. Cooling in a cold room until the temperature of the grapes reaches 3 °C. Double selection of bunches and berries, with gentle destemming and crushing. Gravity vatting in French oak vats with no pumping over and separate vinification of the individual plots. Cold maceration and fermentation for 20 days with indigenous yeasts. Gravity racking into new and second year French oak barrels for malolactic fermentation.
CRIANZA
14 months of ageing in barrels of different cooperages, toasting and origins, without racking, remaining on its lees until bottling, with periodic batônnage during the first four months. The wine is bottled without filtering or fining, so small precipitations of natural origin may appear over time.
AMPELOGRAPHIC DESCRIPTION
Maturana Tinta is a native Riojan variety that is not grown anywhere else in the world. Recovered after years of work and research, it has a small, compact bunch and small berries. Very sensitive to botrytis, it buds late, but ripens early.

Our bottle is inspired by an original 18th century bottle that can be visited at the Vivanco Museum of Wine Culture.
SOBREVILLA (BADARÁN) AND EL MANZANO (BRIONES)
If the 2020 vintage will go down in history for the pandemic and the challenge it posed to humanity, 2021 will be remembered for the last great winter storm in living memory: Philomena. A historic snowfall between 6 and 9 January 2021 hydrated the land in a way that had not been seen for years. The spring was once again very wet, especially in the area around Agoncillo and Alberite, with more than 130 litres of rainfall from April to May. A summer of yesteryear, with a cold, dry July, continued to delay the vineyard cycle, adding a textbook August (hot and cool nights) to achieve October harvest dates that were almost out of this era. Late stripping and a slight leaf removal in the cluster area at the beginning of veraison was carried out in order to achieve better sunlight and aeration of the clusters to favour ripening. The bunches were loose and homogeneous, reaching full maturity, which is complex for this variety. The grapes were harvested on 20 October in both plots.
CATA
Very deep purple-red colour, with a very marked violet rim. Spicy aromas, with black fruit, pepper, clove, mulberry leaves, all on a mineral and undergrowth background. In the mouth it is very balsamic, mineral, with spicy sensations (pepper, rose flower, cumin, clove), with an elegant, vibrant and long aftertaste.
