Manual harvesting of each of the varieties in small boxes of ten kilograms capacity. Cooling in a cold room until the temperature of the grapes reaches 3 °C. Double selection of bunches and berries, with gentle destemming and crushing. Separate vinification of the four varieties. Gravity vatting in French oak vats with no pumping over. Cold maceration and individual fermentation of each variety with indigenous yeasts: 22 days for Tempranillo, 21 for Graciano, 23 for Garnacha and 22 for Mazuelo. Gravity racking to new and second year French oak barrels for malolactic fermentation.
CRIANZA
16 months of ageing in barrels of different cooperages, toasting and origins, without racking. Each of the four wines remains on its lees until bottling and periodic batônnage is carried out during the first months. The wines are cuvéed and bottled without filtering or fining, so small precipitations of natural origin may appear over time.
THE BOTTLE
Our bottle is inspired by an original 18th century bottle that can be visited at the Vivanco Museum of Wine Culture.
EL CANTILLO FARM (BRIONES)
2020 will always be remembered for the pandemic and its consequences. The outbreak of the pandemic paralysed the world and ushered in one of the most complex vintages in history. A cold and rainy winter gave way to an extremely wet and temperate spring and summer, with a pressure of mildew and powdery mildew such as we had not seen for years. The struggle was constant. We lived in the vineyard from May to October. Every dawn. And so on until the harvest. The result: less opulent wines, but very frank. Fine, atavistic, delicate and fruity. Representatives of extreme viticulture and of man's work against adversity.
CATA
Intense cherry red garnet colour. Powerful and complex aroma, with abundant ripe black and red fruit and very well-integrated fine wood. Elegant mineral notes, spices, toffee and liquorice also appear. On the palate it is very expressive, with a silky, fresh, tasty and intense passage through the mouth, leaving a long, complex and elegant aftertaste.
