grape harvest
This is the first time that a sparkling rosé wine has been made with these indigenous red varieties from La Rioja: 90% Garnacha tinta, 10% Mazuelo.
elaboration
All the grapes go through cold storage and a selection table. The extraction of the must is gentle and delicate, with a low yield in order to obtain pure, fruity musts that show the origin of the vineyard.
The musts obtained from each variety undergo an initial fermentation in small stainless steel tanks at a controlled low temperature. Once fermentation is complete and after a period of time on the lees, they are racked and the selected blend, or cuvée, of the single-varietal rosé base wines is made in the proportions indicated above. This rosé will rest until the month of January, when the tirage takes place and with it the second fermentation in the bottle, characteristic of the traditional or champenoise method.
LONG MATURATION IN BOTTLE
The bottles are kept in the natural coolness of the cellar's underground cellars for 24 months, in contact with the lees, where it acquires harmony, complexity and depth in aromas, textures and fine effervescence. Subsequently, in January 2021, it is disgorged with the sparkling wine's own filler to preserve even more of its personality, and with a tiny dosage, Extra Brut, which only harmonises the lively acidity without masking the purity of the varietal and terroir. It remains corked in the bottle for at least another 15 months to perfect its elegant maturity before being released on the market.
TASTING NOTES
Pale salmon colour showing its long maturation in the bottle. Fine, persistent bubbles.
Fresh and complex aromas of red fruit and citrus, with tertiary notes of dried fruit and brioche bread that are very well blended. On the palate the effervescence is present, but with a creamy texture that shows, once again, that balance between the vibrant acidity and the elegant envelope of maturity. The finish is deep and delicate, with a fruity, mineral and complex background that invites you to continue enjoying.
QUALITY SPARKLING WINE IN THE D.O.CA. RIOJA, THE NEW CATEGORY
The D.O. Cava has been present for years in 23 municipalities of the D.O.Ca. Rioja, which is why there are only a few wineries that produce sparkling D.O. Cava in our area.
However, given the great qualitative and prestige potential of this type of wine, in 2015, the Control Board of the D.O.Ca. Rioja began, for the first time in its history, the process of assessing a possible new category of quality sparkling wine within the appellation.
To this end, the technical committee commissioned a team, led by Rafael Vivanco, fourth generation of the family and winemaker at Bodegas Vivanco, to develop and propose its regulations, studying the potential of Rioja and the most international success stories.
Finally, in 2017, the proposal based initially on Champagne (manual harvest, traditional or champenoise method...) but with the personality of the Rioja terroir and grape varieties was approved with great consensus, reinforced in quality even more with lower yields, lower sugar content (only Brut Nature, Extra Brut and Brut), longer maturation on the lees between tirage and disgorgement (minimum months: Generic 15, Reserva 24 and Gran Añada 36), as well as having to pass the finished sparkling wine a demanding tasting by a panel of experts before it can be released on the market.
PAIRING
A very gastronomic and versatile wine that can be enjoyed from start to finish with seafood (oysters, scallops, prawns...), sushi, sashimi, foie gras, Iberian ham, caesar salad, salmon in puff pastry, paella, pasta, roast lamb, pigeon, baked turbot or monkfish, goat's curl, Comté cheese, dark chocolate with olive oil and fleur de sel...
THE VINEYARD, ALESÓN AND BRIONES
Own vineyards located in Alesón and Briones, Rioja Alta. Alesón is located at the eastern end of the Najerilla Valley, at an altitude of 580 metres. A cool area at altitude with deep soils mixed with clay and gravel, conditions that favour the slow ripening of the Garnacha and a higher acidity, ideal for the production of sparkling wines such as this rosé. In Briones, we have different vineyards where we grow the Mazuelo variety. Here the soils are looser and poorer, ideal for controlling the vigour of this variety, improving its ripening and giving this wine a great personality.
THE 2021 YEAR
We leave behind the wet and complicated 2020 to enter one of the best vintages of the last decade in Rioja, 2021. It was a textbook climatic year, with a large amount of accumulated rainfall, especially the significant snowfall caused by the Filomena squall at the beginning of January. This, together with the cold, gave way to a late bud break and a rainy and rather cold spring. The summer was rather dry, with low temperatures in July, which, together with an August and September that were also mild, led to a slow and leisurely ripening, offering direct wines, full of fruity aromas and with a great capacity for ageing. An exceptional vintage with a long life ahead of it.

THE LABEL
Inspired by the oldest silver labels, 18th century, on display in the collection of our Vivanco Museum of Wine Culture, Briones, La Rioja. These early and exclusive labels were hung on the decanters to indicate the origin of the wine that travelled in barrels from its place of production.
