winemaking
The grapes are harvested by hand in small boxes of 10 kilograms each, with very low yields due to dehydration. After a long, gentle pressing, the must is fermented for approximately one and a half months in French oak barrels.
CRIANZA
12 months of subsequent ageing in French oak barrels of different cooperages, toasting and origins. Each of the wines remains on its fine lees until bottling, with periodic bâtonnage during the first months. The wines are cuvéed and then refined for almost another year in the bottle cellar.
THE ORIGIN
Colección Vivanco 4 Varietales Dulce de Invierno is the result of years of research in which Rafael Vivanco set out to recover the almost disappeared traditional sweet wines from La Rioja. Known as “supurados”, these wines were made from grapes that had been raisined during the winter on the tops of houses, and were enjoyed as a dessert wine on holidays and as a restorative.
EL CANTILLO FARM (BRIONES)
PIONEER IN RIOJA
This Naturally Sweet Wine comes from the late winter harvest of botrytised grapes of the traditional Rioja red varieties Tempranillo, Graciano, Garnacha and Mazuelo grown in this unique terroir. It is a wine for ageing, a pioneer in Rioja, which will gain in complexity throughout its life in the bottle, as is the case with the world-renowned sweet wines of Sauternes or Tokay.
CATA
Pale orange colour, clean and bright. Intense and very pleasant aromas of candied fruit, peach apricots, candied orange and quince jam, all surrounded by elegant floral notes and cocoa. In the mouth it is sensual, delicate, with a fine fruity sweetness that is very fresh and integrated, making it a long, tasty and pleasant wine.
PAIRING
It is recommended to be served and tasted between 10 and 12 °C in order to enjoy it in its full balance of aromas, fine sweetness and freshness. It is an ideal wine to enjoy as an aperitif, on its own, or with foie gras or strong cheeses (Roquefort, Cabrales...). It surprises with cold seafood (oysters, lobsters...) and is a great accompaniment as a dessert wine with all kinds of cakes, sweets and seasonal fruits. It is also recommended as an after-dinner wine for pleasant conversation.
