winemaking
Manual harvesting of each of the varieties in small boxes of ten kilograms capacity. Cooling in a cold room until the temperature of the grapes reaches 3 °C and selection of all the bunches before being placed in vats. Double selection of bunches and vatting. Each variety is made separately. After a brief cold maceration of the whole grape bunches (between 10-12 hours), only the tear must obtained is fermented in 80% in small stainless steel tanks at a controlled temperature (12 - 15 °C) to preserve all the varietal expression, and in 20% in 500 litre French oak barrels, new and second year.
CRIANZA
The 80% of the wine obtained remains in contact with its lees in stainless steel tanks for 12 months to preserve the varietal aromas against oxidation and to give it greater harmony and smoothness on the palate. The rest, a 20%, also remains in contact with its fine lees for the same period of time in 500-litre French oak barrels (new and second year). After ageing, the wines are blended and bottled for a further 24 months before being released onto the market.

Vivanco Collection 4 Varietales Vintage White Wine is a wine born from Rafael Vivanco's concern about the tremendous potential of Rioja's native varieties for the production of aged white wines. Thus, after years of research, three vineyard terroirs were identified where these Rioja grapes find their best expression. Four varieties, Garnacha Blanca, Maturana Blanca, Tempranillo Blanco and Viura, cultivated in a sustainable way. A coupage which for the first time is made in our region. A unique wine, full of nuances, born to grow, the result of ageing on fine lees for more than 36 months: our Blanco de Guarda.
INNOVATION
Until now, most Rioja white wines destined for long ageing were based on two fundamental premises. Almost all of them were made mainly from the Viura variety with small contributions of other minority varieties. And, fundamentally, their ageing took place in American and French oak barrels, with prolonged periods in them in search of greater complexity. Colección Vivanco 4 Varietales Blanco de Guarda is a new concept within these white wines born to grow with time. First, because its soul is, for the first time, a coupage of four varieties one hundred percent from La Rioja; on the one hand, Maturana Blanca and Tempranillo Blanco, exclusive to this DO, and, on the other hand, Garnacha Blanca and Viura, grapes perfectly adapted for centuries to the territory of this region. And, secondly, the ageing concept: the 80% of the wine has been aged on fine lees in stainless steel tanks for more than 12 months; the rest, the 20%, has remained in the same conditions in 500-litre French oak barrels (new in a 50%) for the same period of time. The result is a wine made with the utmost respect for the terroir and its varieties. A faithful reflection of the new landscape of Rioja whites.
CATA
Its colour is greenish, almost electric, bright, without at any time denoting its almost three years of ageing. The nose is overwhelming, complex, with tremendous mineral and hydrocarbon notes, denoting its ageing on lees. With the passage of time the fruit appears more frosted, but fresh and still alive. The palate is a real opportunity for enjoyment. Long, dense, with a salinity that speaks almost of other territories. A wine to enjoy and that will continue to grow as time goes by.

Seafood, vegetables, all types of fish, but especially blue and oily fish. Cheeses, rice dishes .... It is a wine to enjoy by the glass on any occasion...
