After your grapes are meticulously hand picked, they are placed in a cold room for several days in order to attain the best fermentation temperature. They then go through a double sorting table where a manual selection is made, first of clusters and then of individual berries before being gravity-fed into small French oak vats.
The different grapes from each vineyard ferment separately to ensure they preserve all their personality.
