Grape varieties:
80% Tempranillo, 10% Garnacha, 10% Graciano.
Vineyards:
A selection of vines in two different terroirs:
1) Briones
Finca El Manzano, 22-years-old Tempranillo in chalky-clay soil.
Finca Porres, 21-year-old Tempranillo in chalky-clay soil.
2) Tudelilla
Finca El Carasol, 15-year-old Garnacha in ferrous-clay soil.
Finca El Torrejón, 15-year-old Graciano in chalky-sandy soil.
Vinification:
Manual grape harvest of each grape variety in small, ten kilogram tubs. Cooling in cold room until the temperature of the grapes goes down to 3 °C. Double selection of clusters and grains, with mild destemming and crushing. Separate vinification of the three varieties. Gravity-fed into French oak vats with no pumping. Cold macerated and fermented with native yeast strains: 25 days for Tempranillo, 21 for Graciano and 27 for Garnacha. Malolactic fermentation in French oak vats.
The wines are blended before barrelling.
Ageing:
24 months in second-year French oak barrels with different origins and toasting levels. 12 months' refining in the bottle.
Tasting:
Intense, dark cherry-red. Intense aromas of red and dark fruit, with light floral, liquorice, eucalyptus and roast coffee aromas. It is both fresh and lively in the mouth; tasty and fruity with a balsamic, enveloping mouthfeel and an elegant, lingering finish.
Pairing:
The perfect companion to any type of tapas, stews, red meat, game, aged cheese, mushrooms...
Serving:
We recommend decanting and serving at 16-18 °C.
